Baby potato in spinach gravy
I love baby potato in spinach gravy . baby potato in spinach gravy is modified version of aloo palak.Potato cooked with spinach is not only healthy it looks good too.
What we need
8-10 baby potato or you can use potato cut in cube
2 cup boil and purred spinach
1 tsp. ginger garlic paste
1 big tomato finely chopped
½ onion finely chopped
1 tsp. coriander powder
½ tsp. garam masala( mix spices)
1 tsp. red chilli powder
Salt to taste
4 tbsp. oil
1 tsp. cumin (jeera) and fenugreek (methi) seed
Oil for frying if you want to fry potato (optional)
How to make
First clean and prick potato soak in boiling water with pinch of salt and cover for 15 minute. After 15 minute drain water and keep aside. Heat 2 tbsp. oil in a pan add potatoes and fry till potatoes change colour .(if you want to deep fry you can then no need to sauté in the pan)
Heat 2 tbsp. oil in a pan put cumin and fenugreek seeds stir for few minute then add ginger garlic paste stir add chopped onion and cook till onion change colour add chopped tomato ,coriander powder, chilli powder cook till tomato become soft. Now add fry potato and stir cover and cook at low flame for 2-3 minute.
Open add spinach puree if you need to add more water you can add to get you desire consistency.
Serve hot with roti or rice.
Note
If you do not have baby potato don’t worry use normal potato for this recipe you can take 1 big size peel and chopped in the cube and stir-fry the potatoes.
Add 1 tsp. butter to give richness and shine.
you can replace potato with mushroom.
