Vegetarian Ratatouille
Ratatouille is a French dish Ratatouille is easy delicious and flavorful eggplant dish Ratatouille is low in calories.
what we need
- 1 big size onion thinly sliced
- 2 clove garlic minced
- 1 eggplant medium, cut into ½ cube
- 2 medium size Zucchini cut into ½ inch pieces
- 1 capsicum/green pepper small, cut into ½ inch cube
- 1 red bell pepper small, cut into ½ inch cube
- 1 big tomato cut into 8 cube
- 2 tablespoon cooking oil (i have used olive oil)
- 1 tablespoon fresh parsley chopped
- Salt and black pepper powder as to taste
How to make
Heat oil in a pan, add minced garlic and onion, cook until onion gets transparent now add eggplant and cook.
When eggplant is half cooked, add the zucchini, and capsicum and continue to cook for 4-5 minutes, then add tomatoes and cook for 5 more minutes then add salt and pepper stir cook 4 more minutes.
Now add chopped parsley to stir, remove from heat. Serve hot or room temperature.
