In a large mixing bowl, combine corn flour and mashed boiled potatoes.
Add chopped green chilies, salt, ajwain, red chili powder, chopped coriander, and chaat masala.
Knead the mixture into a smooth dough. If it's too sticky, add more corn flour. If it's too dry, sprinkle a little water.
Step 2: Shape the Kachoris
Divide the dough into small, equal portions.
Roll each portion into a ball and flatten it slightly to form kachoris.
Step 3: Fry to Perfection
Heat oil in a deep frying pan over medium heat.
Gently drop the kachoris into the hot oil, ensuring they don’t overcrowd the pan.
Fry them on medium heat, turning occasionally, until they are golden brown and crispy.
Remove the kachoris and place them on a paper towel to drain excess oil.
