Dum Aloo Baby Potatoes in Spicy Gravy
Dum aloo is delicious Indian recipe baby potatoes in thick gravy cooked on low heat.
What we need
- 1 big brown cardamoms
- 2 cloves
- ½ tsp cumin seeds
- 1 medium onion
- 1-inch ginger
- 3-4 garlic clove
- 6-7 cashew nut
- 8-9 baby potato
- 1 inch. cinnamon stick
- 1 whole dry red chilli
- 1 bay leaves
- 1 medium tomato pureed
- 1 teaspoon red chilli powder
- ½ teaspoon Kashmiri red chilli powder(optional
- 1/3 teaspoon turmeric powder
- ½ cup curd beaten
- ¼ teaspoon garam masala powder
- Salt to taste
- Oil for frying
How to make
Dry roast brown cardamom, cumin seeds together and cool. Grind onion garlic, ginger, cashew nut and roasted cardamom, cumin seeds add little water make the smooth paste.
Boil and peel potato, prick each potato all over with the fork.
Heat oil in a pan and deep fry potato until golden brown. Drain and keep on oil absorbent paper Take out leftover oil from the pan. Heat same pan with 1 tablespoon oil add bay leaves, cinnamon and whole red chilli sauté for few minutes then add turmeric stir few second onion paste cook till paste become brown or change colour add chilli powder, salt tomato puree and curd cook until oil show separately. Now add potatoes and mix put ½ cup water and simmer on low heat for 10-15 minutes or till gravy become thick. Add garam masala powder. Garnish with chopped fresh coriander. Serve hot. with Naan or rice.Naan
