Healthy oats vegetable soup

Ingredients
  

  • 1 cup oats
  • ½ onion finely chopped
  • 1 tbsp . green beans finely chopped
  • 1 tbsp . carrot fine chopped
  • 1 tbsp . green peas
  • 1 tbsp . chopped capsicum
  • 1 tsp . ginger finely chopped
  • 1/3 tsp . minced garlic
  • 1 green chilli finely chopped
  • ¼ tsp black pepper
  • 3 tbsp . soya milk or low fat milk optional
  • 2 cup tomato stock or vegetable stock
  • 1 tsp . olive oil
  • ½ tsp . roasted cumin powder
  • leaves Fresh Coriander for garnish

Instructions
 

  • Heat oil in a pan and fry onion, green chilli, garlic until onion becomes brown.
  • Add all vegetables and fry for 2 minutes, then add oats stir and cook for 2 minutes on medium heat. Add tomato stock, salt and pepper, roasted cumin powder and bring to boil.
