Healthy oats vegetable soup

We eat oats for breakfast, but we can have them any time when we want to eat light and healthy. Oat soup is very easy and simple to make, and it is a healthy and tasty option to add fibre to the diet. Light and healthy oats soup is a good option for a light dinner.

What we need

1 cup oats
½ onion, finely chopped
1 tbsp. green beans, finely chopped
1 tbsp. carrot fine choppedoats soup
1 tbsp. green peas
1 tbsp. chopped capsicum
1 tsp. ginger finely chopped
1/3 tsp. minced garlic
1 green chilli, finely chopped
¼ tsp black pepper
3 tbsp. soya milk or low-fat milk (optional)
2 cups tomato stock or vegetable stock
1 tsp. olive oil
½ tsp. roasted cumin powder
Fresh Coriander leaves for garnish

Tomato stock

Take 3 cups of water in a pan, add 2 medium-sized chopped tomatoes, cover and boil,  cook on medium heat until tomato becomes soft, press the tomatoes with the help of a spoon or use a blender when it is cool and strain. It will look like a clear soup. You can make it in large quantities and keep it in the fridge. And use as you need.

Heat the oil in a pan, then add the onion, green chilli, and minced garlic, and cook until the onion turns brown.
Add all vegetables and fry for 2 minutes, then add oats, stir and cook for 2 minutes on medium heat. Add tomato stock, salt, pepper, and roasted cumin powder, then bring to a boil.
(If you are using milk, add 3 tbsp. soya milk, stir and boil again, remove from heat.
Light and healthy oats soup is ready.
Garnish with coriander leaves and serve hot.
Notes–
If you do not want to make tomato stock, you can use 1 chopped tomato and 2 cups of water. will get the tomato in your bite. Adding milk will give a smooth, rich, and creamy texture. You can choose any vegetable you like.

Instructions
 

  • Heat oil in a pan and fry onion, green chilli, garlic until onion becomes brown.
  • Add all vegetables and fry for 2 minutes, then add oats stir and cook for 2 minutes on medium heat. Add tomato stock, salt and pepper, roasted cumin powder and bring to boil.
