Fluffy Indian bread/Bhatura

Introduction:

Bhatura is a very popular Indian fried bread, loved for its soft, fluffy texture and delicious taste. Every family has its own way of making crispy and fluffy bhaturas at home.

This bhatura recipe without yeast uses curd and baking soda to achieve perfect softness without long fermentation. It is an easy and quick recipe, perfect for making chole bhature at home.

Ingredients:

  • 2 cups maida (all-purpose flour)
  • 1 cup sooji (semolina)
  • ½ teaspoon baking soda
  • 1 teaspoon sugar
  • ½ cup sour curd
  • ¼ teaspoon salt
  • Water as needed
  • Oil for deep frying

Step-by-Step Method:

  1. Prepare the Dough:
    In a large bowl, mix maida and sooji. Add baking soda, salt, and sugar. Mix well.
  2. Knead the Dough:
    Add curd and start kneading. Add lukewarm water as needed and make a smooth, soft dough.
  3. Rest the Dough:
    Apply a little oil to the dough, cover it, and keep it in a warm place for 3–4 hours.
  4. Shape the Bhatura:
    Divide the dough into equal portions. Roll each portion into an oval or round shape.
  5. Fry the Bhatura:
    Heat oil in a deep pan. Fry each bhatura in hot oil until it puffs up and turns golden brown.
  6. Serve Hot:
    Serve hot with chole or chickpea curry.

  • Oil should be hot for proper puffing
  • Do not roll too thin
  • Resting the dough is important

  • Firstly take a  big bowl mix Maida and suji together add soda, salt, sugar and mix again. Now add curd and start kneading add some lukewarm water as needed make a smooth dough. Greased dough with some oil cover and keep it in a warm place for 3-4 hours.
  • Dived dough into 10 equal part and roll each ball an oblong shape and deep fry into the hot oil.
