I got this idea when my son and daughter moved towards uni life and they had to start cooking themselves. It is important that the food is nutritious, quick and easy to cook and have the essence of home. Students always seem to be battling a budget so the ingredients need to be readily available and cheap. Here are some recipe for students and for those who do not have much time for cooking. I tried to keep these recipes very simple and easy to make with fewer ingredients.

Tinned Legumes and pulses are very easy to use in student life as there is no time required for soaking and boiling. Tins can be bought and stored and used whenever they need to be to cook. Try beans, chickpeas to begin with.

To make chickpeas curry (chhola)

Ingredients
Chopped onions(small) and garlic, 1 clove chopped, ginger chopped, cumin seeds 1/2 tsp and 2 chopped tomato, 2 tablespoons of oil, 1 tin chickpeas, curry powder 1 tbsp, lemon juice, salt

How to make

Heat oil in the pan, then adds cumin seeds and onion garlic. Then fry till onions become brown. Add tomatoes and some curry powder, chilli powder (1 tbsp) and press down on the tomatoes while cooking to release their juices. Add chickpeas, 1/2 cup of water and salt to taste. Note that tinned chickpeas may already have added salt. Boil for 5 minutes and the dish is ready.
Add some lemon juice just before serving unless you do not want it to be sour. You can eat it with rice, roti or with bread (if you want you can add chopped green chilli, my kids like to feel the heat 🙂 ).

Potato and Pea Curry

What we need

2 boiled potatoes medium size chopped in small cubes, green pea 1/2 cup, chopped tomatoes x2, green chilli chopped x2,chopped ginger garlic 1 tbsp, curry powder (or you can use coriander powder) 1 tsp, turmeric powder  1/2 tsp cumin powder 1 tsp) red chilli powder 1 tsp, salt 1 tbsp. and cooking oil

How to make

Heat oil in the pan and add onions, ginger, garlic and fry for a while. Add tomatoes and then curry powder, chilli powder and a bit of salt. Cook till the tomatoes become soft and then add the potato and mix well till it becomes a paste. Add 1 cup water and continue heating. When it starts to boil, add peas and salt. Add another 1/2 cup of water and cook on low flame for 5 minutes.

Layered sandwiches

What we need

Boiled potato slices, cucumber slices, tomato slices, chilli sauce, cheese (any kind you like), coriander and chilli grind  with salt and lemon juice (optional), chat masala optional (salt and pepper)

How to make

Toast bread and then spread coriander paste if you have. If not, use chilli sauce then layer with potatoes and cheese. Then spread tomato, cucumber and chat masala or salt onto the second slice of bread.  Pepper a third bread slice and layer them. Cut it and enjoy.

You can use carrot and salad leaf also.

Cabbage and carrot  sandwich

what you need—-

chopped cabbage 2 tbsp.

1 tsp grated carrot

1 tsp mayonnaise

some drop mustard sauce

2 slice bread

HOW TO MAKE

Mix all ingredients, take one slice bread spread mix and cover with another slice. Cut and serve with tomato sauce .you can make and keep freeze.

TOMATO AND PANEER SANDWICH

WHAT WE NEED      

3 tbsp. paneer  crumbleIMG_4933

2 tbsp. chopped tomato

1 chopped green chilli

black pepper

salt

whole wheat sliced bread

HOW TO MAKE

Mix paneer, tomato, green chilli, salt and pepper. Take a slice bread cover with other bread. Heat a pan with little oil place sandwich cook till both sides get golden brown.

Healthy khichdi

Khichdi is a very simple rice dish. Excellent for people who are recovering from a stomach bug and need something easy to digest for a little while.

What you need

1/2 cup rice cleaned and washed, 1/2 dal moong dal or mix dal clean and washed, 1/2 cup mix vegetables ( cauliflower, peas, potatoes, cabbage, spinach, carrot or anything else), 1/2 tsp cumin seed, 2 tbsp chopped onions, 1/2 tsp chopped garlic ginger, 1/2 tsp curry powder or sabji masala, 1/2 tsp turmeric powder, lemon juice, chopped fresh coriander, ghee or oil or butter, 2 cup water and some salt

How to make

In pan heat ghee, add cumin, onions and ginger/garlic and fry till it is golden brown. Add curry powder and turmeric add dal and rice cook 3-4 minute add water and salt cook till done. when it is done remove from fire add lemon juice and coriander and serve hot.

Note–It can be cooked in a rice cooker.
