Ingredients :
1.5 kg Tomatoes
500 ml Mustard oil
200 gm Garlic cloves
200 gm Green chilies
120 gm Salt
200 gm Ginger (washed and cleaned)
100 gm Red chili powder
50 gm Cumin seeds
30 gm Fenugreek (methi) powder
2 tsp Turmeric powder
1 bottle White vinegar
9-10 Dry curry leaves
Instructions
Prepare the Spice Paste
Grind cumin seeds, ginger, garlic, and 1/4 cup vinegar into a coarse paste.
Prep the Tomatoes & Chilies Wash and dry the tomatoes thoroughly. Cut them into wedges. Slice green chilies lengthwise.
Cook the Pickle
Heat mustard oil in a heavy-bottomed steel pan. Avoid using an iron pan as it darkens the pickle.
Add fenugreek powder and curry leaves. Let them sizzle.
Add the prepared spice paste and sauté for a few minutes.
Stir in mustard powder, red chili powder, and turmeric powder. Fry for about 3 minutes.
Add sliced green chilies and cook for another 5 minutes.
Mix in the chopped tomatoes and combine well.
Slowly pour in the vinegar and cook until the oil starts floating on top.
Turn off the heat and allow the pickle to cool completely.
Transfer the cooled pickle into a clean glass jar for storage.
Storage & Shelf Life
Store in a cool, dry place.
This pickle stays fresh at room temperature for up to 1 year.
Always use a clean, dry spoon when taking out the pickle to avoid spoilage.
Serving Suggestions
