Healthy oats vegetable soup
What we need
1 cup oats
½ onion, finely chopped
1 tbsp. green beans, finely chopped
1 tbsp. carrot fine chopped
1 tbsp. green peas
1 tbsp. chopped capsicum
1 tsp. ginger finely chopped
1/3 tsp. minced garlic
1 green chilli, finely chopped
¼ tsp black pepper
3 tbsp. soya milk or low-fat milk (optional)
2 cups tomato stock or vegetable stock
1 tsp. olive oil
½ tsp. roasted cumin powder
Fresh Coriander leaves for garnish
Tomato stock
Take 3 cups of water in a pan, add 2 medium-sized chopped tomatoes, cover and boil, cook on medium heat until tomato becomes soft, press the tomatoes with the help of a spoon or use a blender when it is cool and strain. It will look like a clear soup. You can make it in large quantities and keep it in the fridge. And use as you need.
How to make

Heat the oil in a pan, then add the onion, green chilli, and minced garlic, and cook until the onion turns brown.
Add all vegetables and fry for 2 minutes, then add oats, stir and cook for 2 minutes on medium heat. Add tomato stock, salt, pepper, and roasted cumin powder, then bring to a boil.
(If you are using milk, add 3 tbsp. soya milk, stir and boil again, remove from heat.
Light and healthy oats soup is ready.
Garnish with coriander leaves and serve hot.
Notes–
If you do not want to make tomato stock, you can use 1 chopped tomato and 2 cups of water. will get the tomato in your bite. Adding milk will give a smooth, rich, and creamy texture. You can choose any vegetable you like.
